Cranberry Chicken

So I was on one of your blogs and looked at a recipe link but now I don't know which one. It was a recipe for cranberry chicken or something like that. So now I am wondering if anyone has a recipe for this?

Hey I thought I would share a cranberry chicken recipe, which is one of my absolute favorites!

Chicken Breasts (as many as you want to make, 4-7)
Whole Berry Cranberry sauce
1 cube of butter
Coconut
Original Bread crumbs

Preheat oven to 350. First pound chicken breast so they are flat (so you can roll them up after filling it.) As you are pounding the chicken, melt the cube of butter in the 9x13 pan. Once melted, take out of the oven. Then fill the chicken with some cranberries, and try to roll up as best as possible. Mix coconut and bread crumbs together in a small bowl. Dip the chicken in the melted butter and then dip in the bread crumbs mix. Set in the baking dish. Repeat until all finished. If the bread crumbs did not stick well, pour on top at the end. Also, if there are leftovers of the bread crumb mixture and cranberry sauce, we like to just stick it in the pan with everything else. It tastes quite yummy with the chicken! Cover with tin foil and bake for about 30-45 mins. But it depends on how thick your chicken is. The last 10 mins or so, remove tin foil to brown. Watch it you don’t want the coconut to burn.

A side note, I usually will only do a half a cube of butter, since that is a lot of butter. However, the chicken is not as moist.

Holy cow that ousnds GOOD! Also I tried the recipe that I was looking for and it was GREAT. I made my own sauce though because I had cranberries I think it would be better with the canned kind. (I don't think I used enough sugar)
